The structure of all animal noses is roughly the same: the upper part of the nasal cavity has many folds, covered with a mucus membrane containing many olfactory cells. When the mucus secreted by the membrane often moistens these olfactory cells, odor molecules dissolve in the mucus and stimulate these cells. The olfactory cells then immediately send signals to the brain's olfactory center, producing the sensation of "smell."

A dog's olfactory sense is so excellent because it has a particularly large number of olfactory cells. Even the rhinarium (nose leather) has many protrusions and mucous membranes that continually secrete mucus to keep the olfactory cells moist and highly sensitive. The number and quality of dogs' olfactory cells surpass those of other animals, so their ability to distinguish various odors is much stronger.

Because of this sensitive sense of smell, dogs are trained for various occasions, such as disaster search and rescue, drug detection and investigation, security inspection for hazardous materials, and so on. Of course, this trait can also be used for some interesting purposes, like the previously mentioned finding of secret money.
